During his tenure as Executive Chef, he was accountable for the recruitment, supervision, scheduling, and motivation of a culinary brigade consisting of more than thirty individuals. The function required a consistent presence, the ability to make decisions, and the ability to adjust. In addition to making direct contributions to the formulation of menus and culinary training, he was responsible for overseeing compliance with recipes, controlling costs, managing payroll, overseeing kitchen operations, and overseeing all back-of-house activities.

During this time, Dr. Guzman gained an important early appreciation for the fact that leadership is not merely an extension of technical expertise; rather, it is a completely different discipline.
